Shouldn't Z-axis be able to move the object back and forth instead of rotating it?

it depends on what you're doing with the "z-axis" here.
moving on the z-axis means you move back and forth.

It depends on the point you rotate around I think. If you wanna rotate you should have this point in the middle of what you wanna rotate.
