Why "<p>"?

Why do we use p? You can still see the text without it.

HTML is Hypertext Markup Language, and it is used to mark and format a file to make it structured. So, using a <p> tag you are saying that the text is not just a text, it's a paragraph and it has some structured features as well. A <p> has some default CSS code already implemented to make it looks like a paragraph, e.g margin.

You cannot style plain text, it has to be wrapped in an element to do so. A p tag also has preset styles that passion text does not.
