Which one is simple, Java or Ruby ?

Ruby for sure. Much easier to learn and pretty basic overall, similar to python. Of the the high level languages ruby is definetly my favorite. I would still recomend learning a lower level language such as c++. c#/java are fine choices too, because you learn alot from them.
