Can a single person able to make video game like subway surfers, car racing etc mobile games

Well it is not impossible but I think it will be very hard task, in grouping of programmers many new ideas and ,graphics for making superb games.

Building a game requires tons of different skills from music to physics and math, programming isn't all in making games and that's why teams are build. Understanding all concepts will take a lot of time. I don't want to discourage you but the reality is building a game like Minecraft alone is near impossible task. You can make simpler video game like subway surfers, Pixel Dungeon etc.
