Sorry I'm not very good in French, so I answer in English. Head tag is used to define information about the page, such as Title, stylesheets (css), metadata and other informations. Note that in HTML 4 <head> tag is required, but it can be omitted in HTML 5. Thus, you can use <title> tag directly before <body> tag.
