x86_64 nasm for Linux (or windows) is my choice. Maybe there should be multiple assembly courses

Some lessons would be relevant, especially to introduce the concept of SIMD. There are many applications still where optimized assembly code will be far more efficient than whatever a compiler could produce. I vote for x86_64 too, with Intel sets, way more popular and well documented.
