I have been coding for some years and I take it seriously now and I been making projects in html and CSS and JavaScript do I need to know everything to be a good website/software/game developer and get a job

No you don't have to know "everything," just enough to get something going to completion
The only benefit of knowing "everything" is you can come up with a better or more efficient algorithm/solution to your problem
If you meant frameworks e.g. react, vue, bootstrap, etc., also no. If you want a job, look at their stack and then learn or review it (not like they will hire you ASAP).
If they don't hire you, you at least have that stack under your belt
