Yes, i did it, but a persistent USB could not storage all data (4GB are not enough sometime) Dual boot can be the best choice for advanced things, yesterday my Linux Mint was in Kernel Panic because of space in my Usb Persistent. ^^

I always avoid dual booting if I could. If you are already on a Linux distribution and uses only one or two penetration tools, you can just install them from your Linux distro repository. last time I checked, on Ubuntu and mint, tools like aircrack-ng can be easily install by apt-get commands. there is no need to dual boot an entire os

best to take a large enough USB and do a regular installation to the usb medium. you need to press a key during boot to direct the bios to the usb. Updating will work fine that way. I've used this for years on the laptop my employer gave me. If updates are a major concern you might consider using a regular Linux distro (Ubuntu / mint) and install the tools using katoolin Or just run Kali as a VM? that might also work for your purposes if you are not using the airCrack like tools that need direct access to the wireless card.
