What will change when you change the setting from "learning" to "practice" (focused)?

Settings give some options in this regard it seems to me. And is it possible to keep one course on learning while putting the one you already achieved in practice mode? Can you choose easily what to practice or what does it change?

That setting only changes which screen shows up when you first open the app.

The setting is nothing more than pre-selecting a start-up screen so that it saves you from the annoyance of having to switch to your favorite screen every time you start the app. AFIK it has no effect on the courses.
