For example when you put some data in the element text or value, this data is not meant to be shown, and meaningless to your site visitors. The data is meant to be used somewhere in your script for a reason & purpose only you should know.
A bit of a note, this approach should only be used when using a hidden element for storing trivial data, not critical data, and it should be assured that it wouldn't bring any harm even if someone view your page source and sees what is stored in that invisible element.
