Well bro these type of apps uses a collection of different types of programming languages.
Such as in FB (Facebook)
PHP is used for the front-end, Erlang is used for Chat,
Java and C++ are also used in several places (and perhaps other languages as well).
Thrift is an internally developed cross-language framework that ties all of these different languages together, making it possible for them to talk to each other.
And Instagram uses python's Django framework and other front end languages.

Javascript is necessary because it defines are the functions of a website.
You can understand it like this :
Html defines the structure i.e. the skeleton of body.
CSS defines the dressing and looks of the body and makes the website look awesome and more responsive.
JS(JavaScript) defines all the organs and working of website .
It is very important if you want to create real websites.
But static websites still exists that are made with the help of html and CSS only.
