What is Character Encoding; How where and why do you use it?

Hi I’m a Rookie to Developing. I’m extremely interested in knowing about Character Encoding! I googled but I still didn’t get a catch on it fully. It would be really helpful if someone helps me understand it!
Please.
A Description along with an Example (if possible) would be helpful!

You have to store and transmit the text somehow. That is an encoding. Morse code is an encoding. Technically the letters I'm typing are an encoding for sounds in the English language.

Those letters are in turn encoded in bits and bytes according to a certain format. So there is some combination of bits representing the letter A, another combination for B and so on.

Any program. Computers only know 1 and 0. You have to encode the information somehow. There are various ways to do it, but you have to choose one.
