What programing language can be used to make large open world games

No one can create a complex Engine alone in a month or even in a year, unless you have a professional team. So I suggest that you'll first need to start with an already existing Engine. Something like Unity or Unreal Engine. These programs tells you which languages you'll need to make a game. In Unity I'd suggest C#

Just having to ask means you're not ready. C++ and UE will probably be the start, but you'll likely throw in your own scripting language or Python to generate the world. That said, MineCraft shows it is do-able in Java if you have too much free time.

no no for a super option, go for unreal engine and it uses c++
