If I were you I would prefer to create chatbot with ai which you can speak with it about anything meanwhile let it to learn .
This will help you to learn ai + bigdata + network etc

Create a mock banking system. Have it include user accounts with login/logout, incorporate class/objects, ability to deposit/withdraw/transfer to another account/check balance.
That should be a pretty basic system to create using the core concepts you're learning here with Java. However, I noticed you haven't finished the Java course so I would recommend staying focused and finish that first, then give this a shot.

The problem with the chat bot is that SoloLearn doesn't teach most of those concepts. lol
However, I agree, that's a great project in my opinion, but it'll require you to seek out other resources and learn from them because SoloLearn doesn't cover those concepts at all. That's not a bad thing and something you should do anyways in the long run.

Yes, I use Salesforce a lot, as well as Apex. Very useful in the corporate world and in high demand (get paid a LOT to know it).

^Go there. They have a very extensive training program that goes over everything. They also give you a free account that you can use while learning it. It'll teach you everything you need to know on Salesforce. It's how I learned it for my job.
