If we have some general purpose languages, why can't we just choose the one?

We have some really multifunctional languages so then why there are still lots of them? Why can't we pick the one? Here are some of them: JavaScript Browser - Vanilla, React, Angular, Vue, Meteor Server - Express, Koa, Hapi Mobile - Cordova, React Native, Ionic, Meteor PC - Electron, Meteor, Proton Native VR - A-Frame, React 360 CLI - Oclif, Vorpal, Commander.js Python Browser - Django, web2py, Turbogears Server - Vanilla, Flask Mobile - Kivy, BeeWare PC - AppJar, PythonQT CLI - Vanilla, Cement, Click Ruby Browser - Opal, ClearWater Server - Ruby On Rails Mobile - RubyMotion PC - Shoes CLI - Clamp We have these 3 cross-platform languages, so why can't we choose one and forget about others?
